Objectives
To provide food handlers with an appreciation of the fundamentals of good food hygiene practice and to equip them with the practical skills necessary to work safely with food.

Introduction to food safety
The law
Food safety hazards
Taking temperatures
Refrigeration, chilling & cold holdings of foods
Cooking, hot holding and re-heating of foods
Food handlers
Principles of safe food storage
Cleaning
Food premises and equipment
Course Structure
The one day course includes lectures enhanced by video and written materials. Delegates are encouraged to actively participate in discussion sessions and group activities.
Examination
Candidates are assessed by an examination paper consisting of 30 multiple choice questions to be completed in one hour under examination conditions. Candidates who achieve 20 or more correct answers will pass the examination and receive a certificate from the Chartered Institute of Environmental Health.
