Aim
To provide Managers with an update on current food hygiene and health & safety issues. This should enable them to discharge their legal and company responsibilities more effectively.
Course Content
Either session can be attended, or the whole day
Morning – Food Hygiene
Review
- Current levels of food-borne illness and relevant trends; impact on the hospitality industry
- Survey of food hazard notifications during the last 12 months
- Food Alert feedback from hygiene audits during the last 12 months
- Examples of recent food hygiene prosecutions; lessons to be learned
- Changes to legislation, e.g. HACCP requirements, food allergen labelling
- Environmental Health Officer initiatives
Preparation for the Future
- Proposed changes to legislation and good practice requirements
- Preparation for using the ‘due diligence’ defence
Afternoon – Health and Safety
Review
- Accident statistics over the last 12 months and relevant trends; impact on the hospitality industry
- Legislation update – changes in the last 12 months
- Current Environmental Health Officer/Health and Safety Executive initiatives
- Food Alert feedback from safety audits and incidents during the last 12 months
- Examples of recent health and safety prosecutions; lessons to be learned
Preparation for the Future
- Future changes to legislation e.g. new fire safety requirements, noise at work
- Preparing to use the ‘best practical means’ defence
Course Structure
Either or both sessions can be attended. Each session lasts for 3 hours with a break mid-way.
The course includes lectures enhanced by visual material and practical teaching aids.
Delegates are encouraged to actively participate in discussion sessions and group activities.
Assessment and Examination
There is no examination. All Course Delegates will receive a ‘Certificate of Attendance’.
