Managing food hypersensitivities in the hospitality industry

As we all know, food hypersensitivities, allergies and intolerances can present significant risks in the hospitality industry. Following the death of Hannah Jacobs after she consumed a Costa Coffee drink containing dairy which she was highly allergic to and the recent Food Standards Agency (FSA) safety alert around mustard products being contaminated by peanuts, businesses are under even more scrutiny when it comes to practices surrounding food hypersensitivities right from their supply chain to the table.

Recently, we carried out a comprehensive survey on allergen management within hospitality businesses – and we’ve summarised the findings in this report, highlighting the primary concerns and operational practices related to managing food hypersensitivities.
